Extra mode:
Finish and save the game in campaign mode as both the Federation and Zeon. Highlight the campaign menu, then hold + + + until all campaign options are shown. One of them should be "Extra". 

All versus mode options:
Finish the game in arcade mode to unlock everything in versus mode.

Submit the case-sensitive name AMURO in the pilot name screen to unlock this voice throughout the game in arcade mode.
